Billy Graham’s mother, Morrow Graham, was known as a hard-working woman. She raised her children to love the Scriptures, took care of the bookkeeping for the Graham Brothers Dairy, and was a wonderful cook.
In his autobiography, Just As I Am, Billy Graham said, “While we worked in the barns, Mother chopped wood for the stove, did household tasks, and cooked for the hungry men.”
One of Morrow Graham’s much-loved recipes is for southern-style chicken salad. Today, as we remember Mother Graham, we are sharing her recipe with you.
Mother Graham’s Chicken Salad Sandwich
1 1/4 lb. boneless chopped chicken
1/2 cup celery
1/2 cup grapes
1/4 cup chopped pecans
1/4 cup chopped white onion
3/4 cup poppy seed dressing
1/2 cup mayonnaise
Instructions:
Cook chicken and cut into small cubes; place in large bowl. Combine mayonnaise and poppy seed dressing; stir into chicken. Add celery, grapes, pecans and onion; stir to combine.
Place on a croissant or bread of your choice, if desired. Serves 5-6.
